The Tayport Method: Fruit First, Always
Just as with our award-winning Raspberry and Blackcurrant Liqueurs, this liqueur begins with a simple principle: let the fruit lead.
We start with whole Scottish strawberries, sourced fresh from local farms such as West Friarton Farm, and macerate them in a smooth grain spirit at 45% ABV for two weeks. This slow infusion allows the alcohol to gently extract the full spectrum of flavour, aroma, and colour from the fruit — no purée, no concentrate, and absolutely no shortcuts.
After maceration, we press the fruit using a traditional fruit press, similar to those used in winemaking, to release every drop of natural juice and aromatic oils.
The resulting liquid is then carefully filtered to remove any solids or pulp while retaining the brightness of flavour. At this stage, the alcohol strength is typically around 25%. We then proof it down to 20%, add a touch of sugar to lift the natural sweetness, and prepare it for bottling. Each bottle is filled, labelled, and hand-dipped in wax at our family-run distillery in Tayport.

A Celebration of Scottish Strawberries
Thanks to the sheer volume of fruit used — more than double that of typical liqueurs — this spirit delivers a burst of bright, ripe strawberry from the first pour to the last sip.
Its versatility is one of its greatest strengths. Whether you’re topping a glass of sparkling wine, mixing into a French Martini, or adding a fresh twist to a Bramble, this liqueur performs beautifully — enhancing without overpowering.
For the purists: try it neat over ice. For the creatives: pair it with citrus, herbs, or gin for a show stopping serve. However you choose to enjoy it, you’ll find that it brings both flavour and finesse in equal measure.
Two Simple Strawberry Cocktails to Try
Strawberry French Martini
A refined twist on a classic cocktail.
Ingredients
- 40ml Tayport Malt Barley Vodka
- 15ml Tayport Strawberry Liqueur
- 15ml fresh pineapple juice
- 10ml sugar syrup
Method
Shake all ingredients over ice and strain into a chilled cocktail glass. Garnish with a raspberry or twist of lemon peel.
Strawberry Kir Royale (Fizz & Strawberry Ice)
A celebratory serve that’s elegant, effortless, and perfect for toasting.
Ingredients
- 20ml Tayport Strawberry Liqueur
- 100ml chilled Prosecco
Method
Pour the liqueur into a chilled Champagne flute and top slowly with Prosecco. Let it naturally blend — do not stir.
Optional garnish: a fresh raspberry or a twist of lemon peel.
