Creme de Cassis - Everything You Need To Know!

Creme de Cassis is one of the most versatile liqueurs in the world — a deep, jewel-coloured blackcurrant liqueur with roots in 16th century Burgundy and a permanent place in some of the most elegant cocktails ever made. Whether you're making a classic Kir Royale or exploring what to do with a bottle at home, this guide covers everything you need to know.

The History of Creme de Cassis

The production of Creme de Cassis dates back to the 16th century, when blackcurrant cultivation became popular in France. The fruit was used to make a medicinal tonic, but soon it was discovered that the juice of the blackcurrant could be used to make a delicious liqueur. The first known production of Creme de Cassis was in the Burgundy region of France, and quickly became a popular drink throughout the country.

How Creme de Cassis is Made

Creme de Cassis Liqueur is made by macerating blackcurrants in alcohol and then adding sugar. The mixture is then allowed to age for several months, which allows the flavours to fully develop. The result is a rich, sweet liqueur that is perfect for adding to cocktails, as a dessert topping, in salads, or even just enjoyed on its own.

Our own Blackcurrant Liqueur follows this traditional method, using blackcurrants grown by Julie and Andrew Husband at East Adamston Farm in Fife — a short drive from our distillery. Two family businesses, one county, one liqueur. In 2024, the Great Taste judges awarded it two stars, writing: "A deep, wine-coloured drink reminiscent of pinot noir. The aroma is earthy and fresh, with blackcurrant notes singing through. The flavour is beautifully fruity and unmistakably blackcurrant, bursting into life at the back of the tongue. The texture is rich and accomplished. Bravo."  You can order our Blackcurrant Liqueur here.

Classic Creme de Cassis Cocktails

The Kir

Add a dash of Creme de Cassis to a glass of dry white wine. Simple, French, and quietly perfect.

The Kir Royale

Replace the white wine with Champagne. The blackcurrant lifts the bubbles and turns a drink into an occasion.

Bramble

A springtime classic — refreshing, stunning to look at, and one of the best showcases for a well-made blackcurrant liqueur. Find our full Bramble recipe here.

Creme de Cassis Dessert Ideas

Creme de Cassis liqueur is also a popular ingredient in dessert recipes. The liqueur is often used as a topping for ice cream or other desserts, or it can be used to make sauces or syrups for cakes and other baked goods. The deep, rich flavour of Creme de Cassis is perfect for adding to chocolate desserts or for making a fruit tart.

Creme de Cassis has earned its place in kitchens and bars for good reason. Made well — from fruit grown in the right soil by people who know what they're doing — it's one of the most expressive liqueurs you can pour. Ours starts at East Adamston Farm. We think you'll taste the difference.
