About us and why Tayport as a location?

As we move directly into the spirits processes we give a small background about ourselves. Established, with the ethos to use locally sourced barley grains as a base for Vodka, Tayport Distillery has now become an integral part of the community. We open up on the many mistakes that we made along the way which only served to make our business stronger.

The Production Processes

A significant part of the tour is spent in the production area, where you will be able to see up close and in detail the process of making our award-winning Vodka. We do things differently and are proud of the innovative methods we have created to make an exceptional vodka and award-winning liqueurs. At all times you will be accompanied by one of our experienced staff who will explain to you each step of the process from the choice of premium grains to complex distillation.

Grain Selection and Mashing

Our raw materials are the highest quality local barley grains from which our spirits gets their taste. Unusually we chose Malt Barley as our base for our premium Vodka. Why Malt Barley as a base? Well we wanted to be different and could not understand why Barley had not been used more in the past. In fact it has been rarely used as a grain of choice for Vodka. Usually wheat or potato has been the choice. We will explain why we chose Barley which is grown on our doorstep. We will include a discussion on the 'mashing in' process in which the grains are cooked with water to convert the starches to sugar. Its an amazing process which then takes us to fermentation.

Fermentation

Next, you’ll visit our fermentation tanks, where yeast is added to the wort from the mash to convert sugars into alcohol. This stage is critical for developing the base flavor of our vodka. You’ll learn about the different types of yeast we use and how fermentation conditions are meticulously controlled to ensure consistency and quality.

Distillation

In the distillation area some real innovation takes place. Our state-of-the-art modern electric stills are designed to refine the spirit, removing impurities and capturing the essence of the grain. Our still is seriously high tech, one of the most innovative stills on the market and unlike anything you will see in a Whisky Distillery where they remain entrenched in centuries old technology. Copper Stills and limited control over the output. This is not to say they are not effective at producing great whisky but the old style stills will not produce great vodka.
